Write out some very short "baby" sentences in Irish that you think you might use, and practice them. It's important that they be very short, because then when you're in the interview you can link them together as needed (with "agus", "ach", "dá bhrí sin", etc.). This will make your use of Irish sound much more natural.
For example, you might practice sentences such as:
I'm interested in this job.
I like kids.
I enjoy being around children.
I don't mind noise.
In the interview, you might join them together in a lot of different ways depending on the flow of conversation:
Oh yes, I'm very interested in this job. That's because I like kids. I enjoy being around children; I don't mind noise at all.
My other bit of advice is not to worry too much about mistakes, losing your train of thought, joining sentences together awkwardly, and so forth. We do that in English all the time. It's just that we tend not to notice it as much because we're not worried about our English skills!
